BASIL CHICKEN WITH JALAPENO SAMBAL




Hi, welcome back again to my kitchen. This time, I will introduce you to one of the leave that I do really like especially when mixed them with foods. The name is BASIL. Basil grows from central Africa to Southeast Asia. 

Italian use Basil almost in all dishes, such as Pizza, Spaghetti, Caresse salad and many more. In my country Indonesia, we use similar kind of thing, calls Lemon Basil. We use the leave for soup, stew or curry. 

In another country such as Thailand, they use basil for Green Curry, Thai Basil Tempeh Stir Fry and others. Thai cuisines almost alike with Indonesia cuisines, we eat rice in every main course. So tonight, I'm gonna cook "BASIL CHICKEN WITH JALAPENO SAMBAL"

Jalapeno is chili pepper from Mexico

Preparation: 10 minutes
Cooking: 20 minutes
Portion: 2 people


MAIN INGREDIENTS THAT YOU NEED
  • 500g chicken breast 
  • 8ons basil
FOR CHICKEN
  • 2 tablespoon soy sauce
  • 2 tablespoon oyster sauce
  • 3 cloves fresh garlic
  • 50g yellow onion
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon paprika powder
FOR SAMBAL
GARNISH
  • Pinch chili flakes
SIDE DISH
  • 1 cup Jasmine rice

Cut 500g chicken breast for 3 cm each. Mix soy sauce, oyster sauce, salt, black pepper together. And let them marinated for 15 minutes. 


Now, let's dive in to the chicken. Warm up pan on the stove and put marinated chicken than cook them for 15 minutes  until them tender.



While waiting the chicken done, now I'm gonna cook the rice for 20 minutes inside the rice cooker. 1 cup jasmine rice for 1 1/2 cup water and put more cups if you have more people.


Next, fried fresh garlic and onion and stir evenly for 5 minutes than pour Jalapeno, stir to make them stick together.



2 minutes before the chicken ready, turn little bit the heat and add basil together with chicken. The last touch, sprinkle with chili flakes than smell it. Yum


Than all ready together. The last part of cooking is being creative on the plate. Place the rice into small bowel and add rice, chicken and basil on the top.


INSTRUCTIONS
✓As usual, prepares equipments from pans, small and medium bowl. 

✓ Marinated chicken with soy and oyster sauce. Pinch salt and garlic and leave it for about 15 minutes. 

✓After that, I cook rice in rice cooker for about 20 minutes.

✓ Next step is Chopped garlic and onion.

✓After 15 minutes, we ready to cook the chicken. Turn on the stove and chicken for about 15 minutes until they tender and brawny.

✓ While waiting chicken and rice ready. Move to make the sambal in another pan. Add vegetable oil, fry garlic than onion and cook them for 5 minutes. The last is add Jalapeno sauce together with them.

✓ When all ready now is time to grab spoon and fork.

TIPS
  • In Australia, very handy to find Basil in every traditional or modern supermarket. Eating that together with Jalepeno sauce created sensational flavour (sour, spicy, sweet) into one! DELICIOUS!
  • The longer marinated process, more tasty the chicken. You can put them in the fridge for hours or a day before you cook it.
  • I suggest to use fresh garlic and onion besides powder. EVERYTHING FRESH is tastier and healthier. 
  • Please double all ingredients when you have more people.
