EGGS BENEDICT
Luckily last week I went to Floraide in Canberra. The biggest flower festival in Australia and those festival so beautiful. Not only flowers but they spoiled visitors with different kind attractions, music, and different kind culinary.
And Last Monday was labour day in Australia so we had long weekend here. Everybody out of the town to enjoy the weekend. Me and my Fiance decided to just stayed home because we went to Canberra last week, did groceries and cooked new recipes.
Anyway, based on my habit every weekend I always go to new Cafe for brunch. One of my favourite is EGGS BENEDICT. I never cook such poached egg before and I feel challenged to make once from my kitchen. LET'S COOK!

EGGS BENEDICT
POACHED EGGS
POACHED EGGS
- 2 Eggs from Kangaroo valley
- 2 Eggs from Pace Farm
- 2 Tablespoon vinegar
- Pinch salt
- Pinch Pepper
HOLLANDAISE SAUCE
- 3 Free range eggs
- 2 tablespoon butter - melted
- Squeeze fresh lemon
- Pinch salt
- Pinch black pepper
TOPPING
- 3 layers Ocean Blue smoked sliced Salmon
- 6 pieces Swiss brown mushroom
- 1 cup Spinach
BREAD
- 1 Piece Croissant
- 1 Piece Sourdough by Laurent
BREAD JAM
- Homemade Mayonnaise by Me (recipe soon)
First of all I need to make the sauce.
- Why? Because making the sauce is the most challenging process, so we start from the difficult once to less difficult.
- I use Electric stove at my kitchen so there is temperature control from 1 to 11. Low heat is around 1 - 3 on stove knob. 4-8 medium heat and 9 - 11 is highest heat.
So I turn on the stove to number 8 - full medium heat in the beggining. Next, pour 500ml water in a stockpot and wait until water boiled. After that, I put stainless steel mixing bowl on the top of it than break one eggs one by one and pour ONLY YOLKS to the mixing bowl and whisk them using Egg whisk . Keep whisking and add melted butter, salt and black pepper. I cook them for 3 minutes and after that reduced the stove temperature to number 4 - medium heat and ready to serve.
Because I'm still continuing to cook another ingredients for Eggs Benedict so I put the sauce inside a tumblr. Why? To keep the sauce warm.
HOW TO COOK POACHED EGGS
Next move to cook the sauce. I need stockpot with 700ml water to boiled after that I add vinegar, and salt. Break Egg one by one in mini sauce bowl than pour inside the boiled water for 2 minutes with number 9 - high heat electric stove.
- I use 2 different kind Eggs. First Egg from Kangaroo Valley Pastured and Eggs from Pace Farm both of them are free range eggs.
- Than before Poached eggs ready, I prepare cooking kitchen paper towel to reduce water from the Eggs before mix them with bread.
You can see the picture above, On the top once is Kangaroo Valley Pastured Eggs with more sticky texture, firm layer on the yolk and less white egg fibre. Meanwhile on Eggs from Pace farm looks more bigger also on the yolks, wide texture and more white egg fibre.

HOW TO WARM BREAD
I just warm the Croissant not the Sourdough. Texture of Sourdough is hard enough so I don't need to warm it up.
Turn on oven to reach 220℃ after that place Croissant to oven tray and cook them in the oven for 5 minutes to create crispiness on the edge of bread and crunchy soft texture.
HOW TO COOK THE VEGETABLES
Meanwhile, waiting bread ready I move to cook vegetables. I have Smoked Salmon, Mushroom, Avocado and Spinach for topping but I just need to cook mushroom and spinach. Turn on electric to number 9 - high heat, wait until 5 minutes and pour olive oil, salt and black pepper. Cook Mushrooms fro 5 minutes and spinach for 30 seconds.
Spinach has soft texture, easy to shrinks on the heat so I just need to cook seconds even minutes.
HOLLANDAISE SAUCE READY, AS LONG AS POACHED EGGS AND VEGETABLES, EVEN BREAD! SO LET'S MIX THEM TOGETHER.
All ingredient ready and let's mixed them together. First prepared bread on a plate, spread Mayonnaise, add topping, poached eggs and Hollandaise sauce. YUM!

⃞ ENJOY!
TIPS
√ Choose good quality Eggs
√ Keep whisking yolks when cooking Hollandaise sauce otherwise yolks become scramble.
√ If you not fast enough when cooking, call your friends or family around, to help you cooking the Eggs or whisking the Hollandaise.
√ Some Cafe added too much Lemon on the sauce but if you not fan of Lemon, just pour little bit as taste.
√ Fell free to put 1/2 Eggs in one portion of Eggs Benedict.
√ And the last is THE BREAD. Change Sourdough to Muffin or Croissant. I'm not fan of Sourdough because the texture and the taste just not mine so every times I changed to Croissant.
